Organic milk from Modenese white cows is particularly suitable for processing into Parmesan cheese, due to the optimal ratio of fat to protein, and the high presence of a beta-casein KBB.
Their feed is NO GMO, NO silage, ONLY Organic fodder, Organic grains and Organic manure for the soil. For the care of our cows we privilege physiotherapeutic and homeopathic treatments, all of which results not only in a longer, happier and healthier life, but also in an excellent quality of organic milk and therefore of our ORGANIC PARMIGGIANO REGGIANO.

The Modenese White Cow is a very ancient breed of cattle, indigenous to this area. Over time and due to the high demand for milk in the market, this cow, was slowly abandoned because of its low milk production, ONLY 9-12 liters/day! 🐄
This is why we would like to mention that it is a highly endangered breed, declared extinct by the FAO. In the 1950s there were about 250,000 specimens that gradually declined to about 200 animals in the 1990s.

Is rich in calcium, phosphorus, magnesium and mineral salts. It is a HIGH digestibility product that is 100% natural and free of preservative additives and dyes, and is naturally lactose-free. Lactose leaves Bianca Modenese milk as early as 48h after processing.

Caseificio Sociale Santa Rita Bio was founded in 1964 as a Cooperative Society Ltd. for the processing of members' milk PARMIGGIANO REGGIANO Seasoning Packaging and Marketing.
It is located in the Apennines of Modena, a mountainous area free from sources of pollution, pure air and water, and fertile soils. The town of reference is Serramazzoni (MO), Emilia Romagna-Italy.
Organic Farming and Animal Husbandry impressed the dairy, and since 1988 they have chosen to use their method, until they obtained ICEA certification drawn from European Regulation No. 2092/1, as amended, in 1992.
Since 2009 we have been able to produce the first and ONLY organic Parmigiano Reggiano cheese with ONLY milk from the Vacca Bianca Modenese (White Cow of Modena).

Caseificio Sociale Santa Rita Bio 1964 is an ethical and organic company, 9 are the family-owned Organic Farms that are part of the business, and ONLY 4 of them, own only Slow Food Presidium White Cow of Modena cattle, while the others own Friesian/Metic cattle.
