The Vacca Bianca Modenese, widespread until the 1950s in the province of Modena, has been supplanted by "more productive" cattle breeds and is now in danger of extinction, along with a piece of our agronomic culture.

Its superior milk offers an optimal fat-to-protein ratio and a high frequency of the K-casein B gene, which improve its dairy qualities.

With this production we want to protect from extinction a Biodiversity so important to our history.

It is the most widespread breed among Parmigiano Reggiano breeders: imported from Holland, it is known as Friesian because the original strain is found in the Dutch region of Friesland. The first cattle arrived in Italy in the late 19th century. In the twentieth century cattle were imported from Italian herds, and the breed, now acclimatized, became known for its high productivity, establishing itself as the most widespread dairy breed in Italy and the Parmigiano Reggiano area.
